Taco Salad

Perfect for a summer evening when you don't want to crank on the oven, this "secret" family recipe from my mom's side is a favorite of my grandfather!

INGREDIENTS: 1 lb. ground beef or turkey - I usually use turkey, packet of taco seasoning mix, 1 head of lettuce, roma tomatoes, onions, small bag of Nacho Cheese Doritos, zesty Italian dressing, shredded cheese of your choice (I usually go for extra sharp cheddar)

DIRECTIONS: While browning the ground beef, shred-cut entire head of lettuce into a fairly large bowl. I got a plastic non-browning lettuce knife at Target that I have been using for a couple years now and works great! Dice tomatoes and onions, and combine with lettuce and shredded cheese (use as much or little of the cheese as your heart desires).  Then, using the hand method, loosely crunch up about half of a bag of Doritos - again, not down to a science. When meat is finished, combine with packet of taco seasoning mix, and let cool for about five minutes before adding to salad. The key is to dress the salad with the zesty (and the key here is also, zesty) Italian dressing.  Best served while meat is warm, but okay if meat is cold too.  Toss, serve, and enjoy!
